Bio Farm, an organic farm in Kawabe-cho, Minamikyushu City, Kagoshima Prefecture, has been consistently producing organic tea since 1998. "Now that the soil is in its natural state, there are more earthworms, and they will cultivate the soil again," says Matsuzaki, who is deeply aware of the greatness of nature. He is strict about taste, saying, "No one will drink tea that tastes bad, even if it is safe," and says he wants to take the time and effort to make good tea.
